Meringue Recipe: A Guilt-Free Indulgence
Ingredients:
To embark on our Meringue recipe-making adventure and discover how to make meringue, gather the following three ingredients:
- 3 Large Eggs – Separated, so you have just the whites. These are a low-calorie source of protein!
- 175g of Caster Sugar
- 1 Pinch of Salt
I recommend a standing mixer with a whisk attachment. You can whisk by hand, but it will take far, far longer.
The Crispy Exterior:
Creating the ideal crispy outer layer involves a delicate dance of ingredients and techniques. Whisk your egg whites to stiff peaks, gradually adding sugar for that satisfying crunch. Baking at a low temperature ensures a gradual and even crispiness, making each bite a symphony of textures.

The Gooey Interior:
I don’t think a meringue recipe calls for a hard meringue throughout. The perfect combination is a crispy exterior and gooey and marshmallowy on the inside. These meringues are light and airy with a really chewy goo to the centre – just as they should be, in my humble opinion! If you want hard meringues throughout, these are probably not the ones for you!
So, let me tell you the secret to the gooey wonder within our Meringue recipe and how to make meringue! Folding in sugar and making sure it is fully incorporated is key. The slow baking process is not to be rushed. It makes sure the centre is cooked but gooey!
